Proper digestion is important for nutrient absorption. Much of our food is overly sweet or salty and our adult palates reject healthy bitter foods. We have the bloated stomachs and sluggish digestive systems to prove it. The good news is that bitters are coming back in the form of artisanal aperitifs and digestives. A little foraging for some backyard roots and leaves and you can easily make your own unique blends.
